I've only have gotten one picture of my boyfriend and whenever i try to call him or video chat, he always makes up excuses why he couldn't answer. Am I being catfished? Or am I overthinking things?

If you only have one photo and nothing else to substantiate who this person is .. Chances are there is a reason he is avoiding a video interaction with you .. And you have EVERY reason to be suspicious. You really know nothing about him .. Only what he wants you to know ... THAT screams loudly that something fishy is going on here.
