Let's say that there are triplets, and then one dies. Are the 2 remaining people still triplets?

Yes ... When someone important dies you're still touched by their presence in your life then .. So you're still a triplet with a missing piece.

Yes, because the word "triplet" refers to one of three children or animals born at the same birth.

Death does not change what has already happened at birth.

Since what makes one a "triplets" is being born as one of 3, I'd have to assume that they would be continued to be called  triplets even after one of them dies
