Sometimes people will pick colors depending on what season they are going to get married in, or if the wedding is near a holiday. Also, colors can be picked according to the time of day the wedding is. The later in the day the more formal the wedding.
I had an evening black tie affair, and my colors were black and white, with red roses. It was stunning. Wouldn't have done that at an early afternoon or morning wedding.
