How do you plan a wedding reception dinner that accounts for the dietary restrictions of the guests, while staying on budget?

Everyone can eat KFC. They may not really like it, but it's generic good.

What my sister did was get small trays of fruits and vegetables and cheese and crackers for her wedding. It's a good idea for a small budget

Almost everyone eats chicken, so go with that and veggies. If someone is  vegetarian they can eat the veggies. There is no gluten in either so anyone with Celiac Disease is covered. If the chicken is baked or grilled, it is  low fat meal. That covers  most diet restrictions.
