You can listen to music on an iPod, Walkman etc, read a book (if you don't get motion sick like me that is!), complete crosswords, sudoku puzzles etc, watch a film, look at the scenery, take a nap (not exactly entertainment, but it helps pass the time!)

MOVIES! Load your iPad/tablet/phone up with as many movies as you can.
If it's in America, look at the number plates and you can see what states they're from. Write them down whenever you see s new one. I've been in Michigan for the past few weeks, and we've gotten about 30/50 states, including an Alaska one, and as well as a few Canadian provinces and Mexican states.
In Australia, it's not so great since there's nothing there, and only 6 states. :-(
My husband and I do audio books. As passenger you can close your eyes and listen, or you can check out the scenery. If you play on speakers it helps the driver pass the time as well without being a distraction. It also gives us something to discuss when we stop for gas and food.
Alternatively---stay up all night and sleep in the car.
