File for unemployment. You were fired apparently through no fault of your own.
If you get approved for unemployment, get a consult with a lawyer to find out what your options might be.
Unfortunately I was fired a little more than 2 weeks shy of being able to file unemployment.
I did, well when I called corporate they said that they had a different version of the event that says I acted unprofessional. I told them that wasn't true and I had a witness. I was told it didn't matter and that apparently my manager thought otherwise.

No. The woman obviously has it out for you and unless harassment charges on your record, I would walk away. There isn't anything you can do at this point. Just go look for another job and move on.
You have to just move on, obviously your witness didn't have your back.
