Why does my friend lie about her life? Her lies have been getting more and more ridiculous lately (saying guys I know have texted her and threatened to kill her, stalk her, etc.) and I want to believe her but I feel like she's making all this up?

You need to consider the possibility that your friend is mentally ill.  If she seems to really believe those things, try to contact her family and ask even they have noticed a change in her behavior.  Late teens - early twenties is the prime time of the initial onset of some forms of mental illness.

Thanks, I just don't know what's up with her...She actually DOES seem like she believes what she's saying, but the thing is I know some of these guys and it doesn't seem like stuff they'd say. I asked her if I could see the texts and she smiled and said she deleted them:/

Another factor behind her lying could be that of fear—fear of the consequences or of what others may think if the truth is told. It is only natural that people wish to be liked or accepted by others. This desire, however, can move them to distort the truth, even if only a little, in order to cover up shortcomings, to hide unflattering details, or simply to leave a good impression.

She very likely is suffering from some level of mental illness. She simply may not be able to connect with reality and needs some very serious help.

The best thing that you can do for someone with emotional problems is to show real love to them. In most cases this is something that is missing in their lives.
